When we get together everyone is in charge of bringing a dish. I always want to bring something healthy, but delicious. But I basically come from a family of master chefs so it can be a little intimidating.
These Balsamic Roasted Sweet Potatoes get the job done. They’re so easy to make with ingredients I keep stocked in my pantry and pair well with classic barbecue food. They taste amazing and make a pretty addition to the table spread too.

Balsamic Roasted Sweet Potatoes
-1 Lg Sweet Potato
-Balsamic Vinaigrette Dressing (I love Bolthouse Farms classic Balsamic, you can also make your own balsamic)
Turn on your oven to broil. Mix the garlic and balsamic vinaigrette together, set aside. Steam the Sweet Potato planks in a shallow water bath in the oven for 5 minutes. Then, drain the excess water then coat the potatoes with the Balsamic and garlic mixture. Broil for another 5 minutes. Once done, sprinkle on the rosemary and lightly drizzle with more vinaigrette and serve.
